Most of the time there are some expectations when you get married and have a family. Dinner for one, needs to be edible, and most like to have something different for a meal than they had the night before! Cherry Enchiladas...

Cherry Enchiladas

This recipe takes a little bit of time to make. Not so healthy, I will admit, but yummy.
Ingredients:
- 1/2 water
- 1/2 cup butter
- 1/2 cup white sugar
- 10 flour tortillas
- 2 cans cherry pie filling (apple works great.)
- 2 tablespoons white sugar
- 1/2 teaspoon ground cinnamon
- 1 tablespoon crushed almonds (optional)
Directions:
1. Grease a 9x13in baking dish. Combine the water, butter, and 1/2 cup white sugar in a medium saucepan, and bring to a boil.
2. Place a few spoonfuls of the cherry filling in each tortilla.
3. Roll up and place seam side down in the baking dish.
4. Pour the hot liquid over the 'enchiladas' making sure to coat the tops completely. (The mixture will be watery.) Cover and refridgerate overnight.
5. Preheat the oven to 375 degrees. Combine the 2 tablespoons sugar, cinnamon and almonds in a small bowl; sprinkle over the top of enchiladas.
6. Bake for 30-40 minutes in the preheated oven, or until outside edges of tortillas are golden brown. Cool slightly and serve.
